You speak into your watch. It sends the recording to your iPhone over WatchConnectivity. There, not on the watch, Diktat recognizes the text and puts it on the iPhone clipboard. With Universal Clipboard turned on, the text shows up on your Mac shortly after.
What you need.
Your iPhone has to be nearby and reachable. Without it, nothing happens. The watch alone does not recognize any text. Your iPhone and Mac need the same Apple ID. Bluetooth and Wi-Fi need to be on, that is Apple's requirement for Universal Clipboard.
Why it needs a moment.
The transfer from watch to iPhone is opportunistic. It runs as soon as the connection allows, not on a fixed schedule. Expect a short gap between speaking and seeing the text on your Mac. An immediate arrival is not the right expectation here.
What the watch does not do.
The watch does not transcribe. It only records and hands the audio off. And it does not take part in Universal Clipboard itself, only the iPhone and Mac do. Without your iPhone, the recording stays stuck on the watch.

Walking, hands full, or when your iPhone stays in your pocket. A quick thought, spoken into your watch, sits ready as text on your Mac. For long dictations, you reach for the key on your Mac directly.
